Fennel brings sweetness and cuts richness, says cookbook author
Cookbook author and Days of Jay founder Jay Wadams has suggested that roasting sausages with fresh fennel makes them noticeably more flavourful, offering a simple addition to one of autumn's staple dinners.
"Italian-inspired roast sausages and fennel is a fantastic one-tray meal," Wadams said. "Roasting fresh fennel makes it deliciously creamy and sweet, the perfect partner for juicy pork sausages."
According to Wadams, fennel is frequently paired with sausages in Italian cuisine because the highly aromatic vegetable is known for cutting through the fattiness and saltiness of the meat, drawing out its subtler flavours. When roasted alongside sausages, he explained, fennel caramelises and adds a sweeter note that helps counter the richness of the pork. Adding fennel bulbs to shop-bought sausages not only makes them taste more robust but also introduces a slightly more herbal and peppery dimension to the dish.
The suggestion comes as many home cooks turn to heartier meals for the autumn season, with dishes like toad-in-the-hole, bangers and mash, and stews all featuring sausages. Wadams noted that sausages, being naturally fatty, tend to taste savoury but mild, and can benefit from extra ingredients to bring out their flavour.
Recipe: roast sausages and fennel
For the main dish, the recipe calls for eight pork sausages, three tablespoons of olive oil, two bulbs of fennel, two onions, four garlic cloves, and salt and pepper. The sauce is made with 100ml of white wine, 100ml of chicken stock, one tablespoon of mustard, two tablespoons of white vinegar, and two teaspoons of brown sugar.
The method begins by heating the oven to 220°C (Gas 7) and placing a rack in the upper section. The fennel bulbs are sliced in half and then cut into thick lengthwise pieces, while the onions are halved and sliced into wedges. These vegetables, along with the garlic cloves, are arranged in a roasting tin, with the sausages placed on top and drizzled with olive oil. The wine, chicken stock, vinegar, mustard and sugar are combined in a jug, then poured into the tray. The sausages and vegetables are tossed until thoroughly coated and seasoned generously with salt and pepper.
The dish is transferred to the oven and cooked for 40 to 45 minutes, until the sausages are crispy and everything has turned golden.
